The provocative title of the round table organized during the International Congress Science in Nutrition 2010 has enabled scientists to develop these opinions and a comprehensive debate on calories, glycemic index, lifestyle, advanced nutrition (as for example nutrigenomics), physical exercise and inadequate knowledge of what a healthy nutrition means.
Dr. Silvana Hrelia – University of Bologna - says:
“Progress in the field of nutrition is not sufficiently well known to ordinary people that go on making the same mistakes. Action should focus on rejecting advertising messages that are harmful for the health of our children and communicating simple concepts to start making some steps forward tackling the obesity pandemic, including childhood obesity and preventing chronic degenerative diseases such as cardiovascular diseases, diabetes and metabolic syndrome.
Language too must change. Counting calories is not enough and in Italy 50% of the people do not know what this word means. Many people do not go beyond a mere mathematical calculation and they are not aware that a diet with few calories does not necessarily help lose weight. An even higher number do not know that a low glycemic index food promotes satiety and is the first step towards an appropriate lifestyle”.
Prof. Enrico Arcelli – University of Milano - says:
“Obesity is a risk factor for early mortality and a disease affecting millions of people and two and a half hours of physical exercise each week are not the ideal target we should all aim at, but they are enough to induce a 25% reduction in the risk of heart attack and cardiovascular diseases.
It is difficult to achieve a full consensus in the field of nutrition, but all agree on these rules: balancing the different nutrients, increasing consumption of vegetables, especially the coloured ones, certainly not potatoes, eating a lot of season’s fruit and selecting extravirgin olive oil. Proteins are important, and the preferable sources are lean proteins, in particular fish, poultry, lean cheese, ham (once fat is removed) and bresaola”.
